Cantina on Wheels: This mobile outpost of the popular local chain serves tacos, nachos and other Mexican favorites.

Dreamcakes Cupcake Truck: The Edgewood bakery’s first truck was so successful that it has added a second truck (well, technically, it’s a van).
- Location: River Hills shopping center (U.S. 280 at Inverness Center Drive) in Inverness most Tuesdays, iStore Self Storage (Montclair Road and Oporto-Madrid Boulevard) in Eastwood most Wednesdays, downtown most Thursdays and the Riverchase Galleria in Hoover and the Summit along U.S. 280 most Fridays and Saturdays.

NOLA Ice: This truck serves up authentic New Orleans-style sno-balls in a variety of flavors.

Shindigs Catering: The product of a pair of fine-dining chefs, this truck serves a variety of burgers as well as Asian-style steamed buns, all made from local ingredients.
- Location: Southside near the UAB campus most Mondays, Wednesdays and Fridays; Fifth Avenue North and 20th Street downtown most Tuesdays and Thursdays; Railroad Park downtown most Saturdays.

Spoonfed Grill: One of the first trucks in town, this one serves a rotating variety of sandwiches, tacos, burritos and salads.

Taqueria Guzman: Called simply “the taco truck” by in-the-know locals, the authentic tacos from this truck were recognized in Southern Living‘s “Best of the South” issue.
- Location: Texaco, 215 West Valley Ave. Homewood, every day but Monday.
Taqueria Pineda: Another authentic Mexican taco truck, this one is hidden in Tarrant.
- Location: Marathon, 1818 Pinson Valley Pkwy., Tarrant, every day but Monday.
